Vienna-based Revo Foods and Belgian food-tech company Paleo have received €2.2 million in funding from the EU’s Eureka Eurostars program to bring vegan salmon enhanced with amazing realism to the table. The companies are famous for developing a unique 3D-printed salmon filet, “THE FILET – Inspired by Salmon,” incredibly lifelike and containing a specially fermented myoglobin protein.
Usually found in animal muscle, myoglobin is a heme protein that is responsible for the taste, smell, color, and even iron of traditional meat. Through an innovative fermentation process, Paleo makes cruelty-free myoglobin without any animal inputs or GMOs. It is exactly what gives Revo Foods’ plant-based salmon its true-to-life look and taste, as well as a great nutritional profile. With 3D printing, Revo Foods layers materials like proteins and fats to mirror the distinct white stripes and textures of natural salmon, with no environmental damage at all. The company has announced their innovation reduces water use by 90% and CO₂ emissions by 75% compared to traditional fish products.
Available since September 2023, Revo’s mycoprotein-based salmon is the very first 3D-printed food in supermarkets. Now, with added myoglobin, this filet will appeal to a broader consumer base, addressing a growing demand for sustainable, delicious alternatives and putting more (3D printed) fish in the sea(food market).
